Week 4: Meal Plan + Recipes + Grocery List + Nutritional Info

Week 4 is here everyone!! I am pretty excited about this one because last week’s recipes were pretty hearty, this week I chose to lighten them up a bit and get ready for late spring.  It has been so warm on this side of the world, I have been able to get away with not wearing a jacket most of the day.  Cannot wait for summer to arrive.

I am deep in thought for my next challenge, and wanted to ask you as readers of my blog what you think of this challenge format.  I am finding 30 days to be quite a challenge, and if I find it a challenge, perhaps the readers will find it even more of a challenge! I am so open to constructive criticism on how I can make it better for next round.  I could do less recipes, or shorter time frame (21 days instead of 30?).  I also plan to do a variety of different blogs and themes, so suggestions on those I would be open to too!

Here are the list of recipes I plan to make next week From Oh She Glows!

  1. Zucchini Bread Oatmeal
  2. Chickpea Pancakes
  3. Cardamom Almond Pear Crisp with Yogurt
  4. Chana Masala (Recipe found in cookbook)
  5. Flaked Tuna Salad
  6. Lemon Dill Tofu and Green Goddess Kabobs
  7. Taco Fiesta Potato Crisps and Kale Chips (Recipes found in cookbook)
  8. Pecan Pie Larabar and/or Chocolate Chip Larabars
  9. Crunchy Seed and Oat Flatbread with Edamame hummus (Flatbread found in cookbook)
  10. Snickerdoodles

I have made the menu plan and grocery list for this weeks’ challenge as well, found here (OSG Challenge – Week 4) – you will note the grocery list now has numbers beside each item corresponding to which menu item it is.  That way you can just do some of the recipes if you like, and omit others.  No matter what, you have a handy grocery list with you!

Oh She glows week 4I will be posting another review later on tonight… if I make it with the mass amounts of thesis edits to do. Haha, juggling this with a masters’ is interesting at times 🙂 Thanks for continuing to read on my journey.
