Hey Everyone!

Week 3 is upon us! I am really sorry it has been so delayed getting this information out to you, hopefully no one is relying on me for their grocery shopping.  If you are, I am terribly sorry and will take full credit of my offer to spend tomorrow morning going out for breakfast instead 😉

Anyhow, here is the latest meal plan, and grocery list for this week ahead! I am particularly excited about the dinner party I am hosting this thursday at my house, making the Sweet Potato and Black Bean Enchiladas with Avocado-Cilantro Cream Sauce (found on p. 147 of the Oh She Glows Cookbook) – thanks for all of you who voted!!

Also on the list this week are:

  2. Sunrise Scramble with Roasted Home Fries & Avocado Toast (from cookbook)
  3. Chickpea Miso Bowl with Mushrooms
  4. Summer Harvest Tortilla Soup (from cookbook)
  5. Veggie Summer Rolls with Spicy Lime Sauce
  6. Crispy Quinoa Cakes with Home-baked Fries (see cookbook) and Avocado Aoili
  7. Sweet Potato and Black Bean Enchiladas with Avocado Cilantro Cream Sauce (from cookbook)
  8. Blueberry Spelt Muffins
  9. Peanut Butter Cookie Dough Bites (from cookbook)

So lots from the cookbook this week! I have a lot of new followers who just got the book so wanted to try a few they suggested, or ones they wanted to try.  Stay tuned for lots of reviews 🙂

Lastly, I will be in the big city of Vancouver most of this week, so lots of my meals will be family/friends affairs… I will have lots of taste testers on hand.
