Week 1 round up – the reviews are in!

Hi folks! Ok got lots to throw at you today, I am on to week 2 of my Oh She Glows 30 day challenge – and just recently posted the newest meal plan.  Missed it? No worries I got it here for you.

And to wrap up last week, I am going to review the list of items I made, which haven’t been reviewed yet.  These are (with links to the recipes):

Okay, first up, the Health Chocolate Chia Pudding.  I kicked off the first day of my challenge with this bad boy, and wow, there are so many different things to do with it! I was shocked at how good of a pudding it made, the chia thickens the contents of the liquid and turns it to an almost tapioca consistency.

Day 1, I layered it between chopped banana, coconut, and drizzled some extra peanut butter on top for extra protein.  Alone, this pudding is great in calories (201kcal) and has only 1.3g of fat.  (See full nutritional information here).

Day 2 I decided to mix it up a bit – partially because I wanted to try it out with other flavours, and partially because I was inspired by all the amazing breakfasts posted on Instagram.  I decided to test my culinary skills at a banana soft serve ice-cream bowl (recipe for banana soft serve is in the Oh She Glows Cookbook).  I added some soaked goji berries and frozen strawberries to the banana soft serve – and topped it all with fine coconut, tahini, and more goji berries.  It was divine!!

Even my mom tried out this recipe this week, and I had to show you her presentation – isn’t the strawberry bunny super cute 🙂 Great for kids or for holiday gatherings.

The Tropical Pineapple Boozy Baked Oatmeal was one I planned for Easter weekend.  I wasn’t going home for this holiday, so I wanted something special to chirp me up (pardon the pun).  I am a big fan of Oatmeal in the morning – it is pretty hard for me to stay away to be honest… so I had to try this one! I didn’t add the ‘booze’ as I wasn’t feeling it, but I could see how it could send the flavours over the top!

I gave this baked goodness a great review.  This was part in fact that I am biased for oatmeal, and after trying some of the other Oh She Glows oatmeals – I was impressed by how it could taste different from the others. What do you think of my food art? Haha, I think I need culinary school…

The Winter Detox Green smoothie was fun to make, and to decided to do a #guesstherecipe contest on Instagram using it.  I wanted to see who was clever enough to go to the Oh She Glows Recipe Bundle! Have you heard of this? If you preordered the Cookbook last year, you got it delivered to you for free. But now it is on sale on her website, found here.  It gives you 10 recipes that didn’t make it to the cookbook, along with a sample meal plan.  Super awesome recipes too! I am going to be trying a few throughout the challenge.

IMG_5784I liked this quite a bit – very refreshing! Overall thoughts however, it was difficult to blend well in my blender (which is of fairly good quality).  The kale and apple were definitely present in the final product.  Also, I wasn’t full for long.  I didn’t realize there wasn’t a high protein content (5.2g) which doesn’t cut it for me for breakfast – so on day 2 I made it my snack and had a chocolate zucchini muffin with PB and chocolate sprinkles on it for breakfast

Now the Jumbo Stuffed Shells were something I was interested to try, especially since there isn’t a lot of soy currently in my diet, and sometimes I have to remember it’s a good source of protein – and an alternative to nuts and legumes in a plant based diet.

I was completely shocked by how many people liked this on Instagram, it is my most liked picture yet! My boyfriend laughed at me as I rushed outside our little apartment to take the winning shot of it. Yes my dinners are often cold by the time I’ve done fussing over them.

Okay I hope you are still reading… I have decided that I am going to be reviewing on my blog a lot more frequently so you can see all the recipes!

Here is the Cheaters Maple Baked Beans on toast, I was shocked by how simple this recipe is.  My beans were overcooked to begin with so I wasn’t hoping for anything ecstatic – but I was pleasantly surprised

Last but not least, the Coconut Oil “Chocolate” Bark.  Well, lets just say the minute this was posted on Oh She Glows, I was so intrigued to try it out.  I didn’t understand how it could make such beautiful easy bark! It looked like a lot of people were trying it on Instagram too, so I had to try. (Taken in the wonderful Vintagerous vintage glass)

IMG_5797 IMG_5801Now don’t get me wrong – this was very tasty.  But to an Oh She Glows dessert standard? Not my favourite.  I don’t know if it was the pan I used, or if I didn’t stir enough, but parts of it never froze, and there was always an ooze of maple syrup coming off of it.  Did anyone else have issue with this? I mean, it wasn’t the end of the world, I love liking maple syrup any day.  I just have now tried a bunch of the dessert recipes and this falls somewhere low on the list in comparison.  (Full review here)
