Review of the Thug Kitchen Artichoke Dip

Day two is here friends, so exciting.  Already feeling the love from all the new Thug Kitchen followers and gotten some great inspiration on recipes to make.  Thank you for that!

Today, I will be reviewing the Artichoke Dip, which is the snack for the week and found in the Party Grub Cookbook, page 43.  I was really excited to try this as I LOVE artichoke dip, and usually it contains a ton of cheese and other non vegan goodness, so I was wondering what a plant-based version would taste like.

This one is loaded with nutritional yeast, or Nooch, which is what the cookbook calls it.  It has 12 ingredients and fairly simple directions, so I was excited to get this going and have it with some super yummy Portofino Bakery bread I purchased.

I really liked that this recipe was not so heavy on the nuts, and let the spinach and artichoke do the talking.  Lots of vegan dips these days are pretty heavy on nuts, which is great but also makes it heavy in calories.  I was shocked that this was only 161 calories per serving, and a great little source of protein (5.6 g).  A great way to add some added energy to your day in between meals.

Other comments about this is that the instructions were really easy to follow, and the ingredients were easy to find.  I don’t like how the time isn’t specified in the recipe, however I found it didn’t take a lot of time to make.  I found the appearance to be just like the real deal! The only thing that was missing from an original artichoke dip was the stringiness of the cheese.  It was extremely filling, and lasted a long time in the fridge, but was easily devoured within a couple of days (he he).
