Salt & Vinegar Chocolate Chip Cookie Bars

This is not a joke recipe, I tried it and was shocked at how good it tasted to had to post! Mix salt and vinegar chips in with your cookie dough, load with chocolate chips and bake for the crunchiest, densest cookie bars you will ever have!

Equipment

  • Standing mixer

Ingredients
  

  • 1 tbsp flax seed ground
  • 3 tbsp water
  • cup melted butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • ¾ cup rolled oats
  • ¾ cup oat flour
  • ¾ cup almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (I used a mix of chocolate and butterscotch
  • 1 cup salt & vinegar chips (I prefer Lays)
  • each chocolate bar, chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Line an 8 inch pan with parchment or oil.
  • Mix flax seed with water and let stand for 10 mins, forming a flax egg.
  • Beat the melted butter with sugar until combined.
  • Add the flax egg and vanilla, beat again.
  • Mix in baking soda, powder, flours and ¼ cup of the chocolate chips with a spatula until incorporated.
  • Spoon half of the dough into dish and press down.
  • Crush potato chips and sprinkle on dough, pressing down lightly.
  • Crumble the remaining dough on top.
  • Break chocolate bar and sprinkle on top.
  • Bake in oven for 18-20 minutes, until golden brown around the edges.
  • Allow to cool for 10 minutes before cutting into pieces.
