Spicy Green Hummus

In honor of St. Patrick’s day I had to come out with something green and snacky to enjoy with a good beer! I had some leftover green chickpeas in my freezer just waiting for the occasion. You can get green chickpeas at Costco and other specialty shops, but edamame would also work great, and because there is cilantro in the recipe, a regular chickpea would still make the dip somewhat green.

Please let me know what you think of the recipe and if you try it yourself. It makes a LOT which you can freeze for another time, but you might just eat the whole lot like I did this week.

Green & Spicy Hummus

Prep Time 10 minutes

Servings 4 cups

Equipment

  • Food processor

Ingredients
  

  • 20 oz green chickpeas or edamame
  • 1/2 cup cilantro
  • 6 tbsp olive oil extra virgin
  • 2 tbsp tahini
  • 2 each garlic clove
  • 5-6 each pickled jalapenos
  • 3 tbsp pickled jalapeno brine
  • 2 tsp lime juice
  • 1 tsp sea salt optional – or to taste

Instructions
 

  • Add garlic to food processor and mince finely on high speed
  • Add all remaining ingredients except for the olive oil and process on high until a smooth thick paste forms
  • Slowly add the olive oil, on low speed until incorporated, hummus should now be a somewhat whipped consistency
  • Taste, and add salt or water to thin as necessary
