Review of the Zucchini Oatmeal, Flaked Almond “Tuna” Salad and Snickerdoodles!

My oh my, am I so behind on my reviews (covers eyes).  I had this neat little plan of how I was going to keep everything going at once, and well I’m not… sorry!  I am currently on my last day of the Oh She Glows 30 day Challenge (which is super exciting) but I still have so much more to report on it! So bare with me for at least another week or two.  I am going to review the remaining week 4 meals in chunks, just so it’s not so overwhelming for you as readers.  I will also do a major wrap up post at the end of it all, with more stats (my specialty!)

Today, I will be reviewing the Zucchini Bread Oatmeal, the Flaked Almond “Tuna” Salad, and the Snickerdoodle cookie.  It has been so fun to look back to some of Angela’s older recipes, and have been finding lots of inspiration on Pinterest and Instagram (thanks to those of you who have inspired me!).  I hope to help uncover some of the older classics that get buried by all the new ones.

First off, the Zucchini Bread Oatmeal – where do I begin with this one! I was so shocked at how much I loved this one.  I was skeptical, I have to admit.  Zucchini and Oatmeal? Then again, the carrot cake baked oatmeal that she does is also amazing (check it out here), so I had high hopes that the veggie oatmeal would work out.  I used my new food processor for this one, to get the zucchini grated nice and fine.  I think that is key with this one.  Once it is cooked and mixed with cinnamon and other spices, the vegetable adds some nice density and freshness to the breakfast.  You can’t notice it’s taste at all!  I made this four days in a row, and was so excited by the next day to have it again.  I think that is a very good sign 😉  The other comment that Angela makes on this recipe is to add vegan butter and brown sugar on the top.  Done! Wow that really makes it extra good.

Next, I am going to review the Flaked Almond “Tuna” Salad. On first taste, I really enjoyed this one.  It was crunchy and fresh – perfect for spring.  As a pescetarian however, it does not replace tuna in my opinion, and is very different in texture.  I had three servings of it that I mowed down for the next few days.  Day 2, I still enjoyed it and was a good accompaniment to a giant mound of salad greens.  Day 3, I was absolutely sick of it.  I think I may have OD’ed on nuts by that point (I was also eating leftover peanut butter bites).  So I think all in all this will probably get my lowest OSG review just based on eating it way too much.  I also tried to make the grape seed mayo (found in the cookbook) to use with the salad.  I think it was because I used soy milk powder instead of a true soy milk, it didn’t make a very good mayonnaise.  I would like to try this again with another attempt at the mayonnaise and see if my opinion changes! I’ve heard/seen lots of good reviews of it on Instagram, so I really do want to give it another shot.  The full review of this recipe is found here.

Flaked Tuna Salad

Lastly, the lovely Snickerdoodle cookies! Man, I am eating my weight in Oh she Glows desserts, being a food blog reviewer is hard work hehe.  I made these up on Friday evening, I think this is going to be a new weekly tradition.  Usually, my boyfriend has his “man time” on weekend evenings, so I clear the house (truth be told I usually just go to bed haha), but lately he has been out a lot playing hockey with his buds, which leaves me to the house alone.  What is a girl to do?? Bake obviously! I liked these a lot, pillow soft with a nice crunchy cinnamon brown sugar-coating, you would not know these are vegan even if you tried.  I ate about half the batch that night, and then pawned them off desperately on my friends the next day, so that they wouldn’t all be gone because of me.  The taste testers opinions were unanimous, they were delightful!  You can see the full review of these cookies here!

That is it for today.. got to pound through this thesis (it is almost done!!) I am procrastinating majorly through this end writing stage.  I just keep thinking to warm summer days at the beach away from the computer, I cannot wait! Well I will be blogging lots too 😉
