Review of the Spelt Blueberry Muffins, Chickpea Miso Gravy Bowl, PB Cookie Dough Bites, and the Sunrise Scramble

Review number two! I’m on a roll now 🙂  So to wrap up Week 3 of the Oh She Glows Challenge, I am going to review the last four recipes I made: the Blueberry Banana Spelt MuffinsChickpea Miso Gravy bowl with Sweet and Tangy Portobello Mushrooms,  Peanut Butter Cookie Dough Bites (from the Oh She Glows cookbook, p.235), and the Sunrise Scramble with Roasted Home Fries and Avocado Toast (from cookbook, p. 33).

First off, the wonderful Blueberry Banana Spelt Muffins.  I must admit, I have made these before but it was a long time ago and I was really craving muffins again after the wonderful chocolate zucchini ones I made during the first week.  I love how soft and fluffy these ones are, and the blueberries literally explode in your mouth – so amazing! Next, I want to review the Chickpea Miso Gravy bowl with Sweet and Tangy Portobello Mushrooms.  To be completely honest, it was at the end of a long busy week, and the weather was warm, so the last thing I wanted was a warm cozy bowl of potatoes and quinoa.  So I modified the dinner a bit, and I was so surprised by how it turned out!  I couldn’t find chickpea miso, so I used the miso I had already in my fridge (genmai I believe), and paired it with spiralized yams, instead of making quinoa and baking slices of yam.  It was a perfect spring meal, still hearty but not too heavy.  I think that next time I would only make half of the gravy, as it made tons.  Also, be cautious that the gravy gets very thick very quickly, so don’t be too generous on the sorghum flour. I finished off my breakfasts with this mad Sunrise Scramble, with roasted home fries and avocado toast.  Those of you who don’t have the cookbook, I would buy it for this recipe alone! I know that I probably sound like a broken record – I am pretty much loving everything I’ve made so far on the challenge.  I am trying to be critical but it is very hard to be!! For me, what really made this recipe was the potatoes.  The addition of arrowroot powder or cornstarch, although seemingly insignificant, adds the perfect crunch to the potatoes that would be missing otherwise.  The scramble was great, however I think next time I would let the tofu be a bit more course (I whizzed mine up in the food processor).  I also doubled the amount of nutritional yeast added, and threw in some sriracha for good measure as it was a bit mild on flavor.  Lastly, this one wasn’t my favorite as a leftover – so plan to eat it all in one sitting (perhaps for a brunch party?)  See the full review here!
IMG_6057 IMG_6058 Just take a good look at those potatoes!!!IMG_6064Sunrise ScrambleLastly, I made these wonderful Peanut butter cookie dough bites.  Wow those were intense, I could easily have eaten the whole bowl in one sitting.  They taste just like cookie dough!! I had some friends try them and 99% of them loved them, the only person who didn’t wasn’t a fan of cookie dough (which sadly happens).  So for those of you vegans that are really missing a good cookie dough, this is the ticket!! If you get a chance, eat them on a ferry boat ride, it makes it THAT much better 😉  Check out the full review here!
