Review of Elvis Bars, Green Monster, Summer Peanut Rolls and Steel Cut Oats

I am so sorry this is taking way too long to write to you, it has been SUCH a busy week.  For those of you who don’t know, I am doing my masters in health promotion, and am finishing my thesis right now.  Why I decided to start a blog is a bit beyond me, but this is how I work best.  In any case, I am sorry for the delay in reviews.  I have planned a backlog of reviews for the next few days, so you will get some great information coming your way!

Let’s jump right into it today.  I am going to be reviewing first the Oh She Glows Elvis Bars.  I adapted these a bit as I was a bit sick of chocolate (I know, how is that even possible!) but my good foodie friend, Dubravka, convinced me that raspberry jam would be just as decadent on top.  Boy was she right.  A good change in flavors.  I made the chia jam in the Oh She Glows Cookbook, but instead of using chia, I used ground flax and pureed the berries before cooking, so it really made a thick sauce as opposed to a jam.  It froze very nicely and was simple to make in my dad’s blender, you don’t really need a heavy-duty blender/food processor for this one which is nice, apart from making sure the nuts are finely ground.  Read the full review here

Elvis Bars

Next I made the Green Monster Smoothie for breakfast with my mom (Recipe found in the Oh She Glows Cookbook).  I have made this smoothie many times over, but it is a great go to as it is quick, easy and tastes great every time.  I have played around with adding various nut butters and milks, and I do think the original is the best, Angela has perfected the recipe.  If you love the glass in the next few photos, check out Vintagerous for the lovely vintage glass.  See the full review here.

IMG_5999_2IMG_6005Green Monster Smoothie My next meal I made and transported with me around Vancouver was the lovely Veggie Summer Rolls with Spicy Peanut Lime Sauce – I made mine with almond sauce instead as that is what I had on hand.  I apologize, I really should have photographed what the inside of the wrap looked like in the end, but I was so excited to share it with my dear friend Lara, everything else was thrown out the window at that point.  We both commented on how lovely and fresh it tasted.  The only main thing I would change with this one is replacing the tofu with either a marinated variety, or smoked.  But even plain, it was great with the added cilantro, basil, and drenched in the sauce (haha I may have overdone it on the sauce!).  See full review of recipe here.Summer Veggie RollsIMG_5984 IMG_5988 IMG_5998_2

Last but not least, I am going to review the Make Ahead Steel Cut oats – with cinnamon peanut butter swirl.  This one surprised me as I am new to the steel cut oats bandwagon, and I must admit I haven’t turned back. Steel cut is the way to go, such a nice chewy texture and perfect for reheating.  I do think though that eating it fresh is best, but it does take a while to cook so sometimes it’s good as a reheat in a pinch.  The cinnamon swirl was nice, although I next time would have tried some of the other toppings as it was almost too filling.  Great for a morning where you know you have a big day ahead!  See full review of recipe here.
