This recipe is for day 3 of the Deliciously Ella 14 Day Challenge: The Banana Bread. I wasn’t particularly excited by this recipe to be honest, as you can see below. It wasn’t bad but it wasn’t great either. This may be why there is a delay on posting the review, ha ha. Review as follows…
- Ingredients = 4 stars
There were seven ingredients in this recipe, and the ingredients were easy to find. This recipe is gluten free, however it contains a lot of tree nuts, so you have to be careful for allergies. It is vegan and refined sugar free.
- Preparation = 3.5 stars
There was a bit of preparation with this meal, first of all, getting bananas super ripe. I ended up freezing mine and then waiting them for defrost. Also, you have to grind up the nuts into a fine flour before cooking with them. This I guess also goes into time, but I also think it’s excessive to have it bake for an hour.
I was shocked by how expensive this recipe was to make. It asks for 2 cups of almonds, and one cup of pecans, which cost me roughly 12$ alone. The with the mashed bananas, half a cup of maple syrup and buckwheat flour, you are looking at about a $20 loaf! (depending on where you source your ingredients). This is definitely a treat…
- Time – 3.5 stars
As mentioned above, this takes over an hour to make, although most of that time it is sitting in the oven, however it seems like a long time to bake!
- Appearance – 3 stars
I was not excited by the loaf that came out – It smelled fantastic however! As you can tell by the photos 🙂 However, it is difficult for banana bread to look great. It definitely came out dense.
- Taste and Texture – 3.5 stars
Again, not particularly excited by the taste and texture, it was very very dense. I liked the smell of the heavy amounts of cinnamon added, but the amount of nut flour made it very dense and almost papery in texture.
- Satiety Level – 4.5 stars
This recipe is EXTREMELY filling, I could eat one piece and be full until lunch time.
- Longevity – 4 stars
I ended up freezing a bunch because I wasn’t sure I would get through the full loaf in time. The pieces I did leave out tended to stay together and taste the same. However it did lose a point because it broke apart a few times in the toaster oven when I tried to reheat it.
