Review #3 of the Oh She Glows 30 Day Challenge – Chickpeas, Pad Thai and Detox Soup

Woof – it’s been a busy week 1 of the Oh She Glows 30 Day Challenge! I have cooked up a storm and can barely keep up with my reviews 🙂 So this will be a combined review of the Salt and Vinegar Chickpeas and Eat Your Greens Detox Soup, both found in the Oh She Glows Cookbook – and the Raw Rainbow Pad Thai – found here First up, the Salt and Vinegar Chickpeas – I have made this before but just simply couldn’t resist making again, and it’s hard to think of different protein filled snacks that aren’t filled with nuts – I tend to overload on those healthy fats! They are great to grab and go in a little container to snack on during the day C. they are a healthy alternative to chips – with just as much flavour need I say more! Screen Shot 2015-04-05 at 5.49.42 PM And if you are interested in the details, check out my full review here: OSGChallenge 30 day review – SVChickpeas Next up, is the Raw Rainbow Pad Thai – a very colourful dish!  I wasn’t feeling the raw component to be honest, so I pan fried the vegetables slightly, just to give them a warmer feel, and less crunch.  I think in the heat of the summer this dish would be ever so fantastic raw however.   The sauce is what really makes this dish.  I would add the ingredients to a hand immersion blender if you have one, and it froths it up quite nicely.  I also doubled the water and oil in the sauce as mine came out very thick (opposite from the directions).  My peanut butter was also very thick to begin with so that may be the case.  Next time I have to try with almond butter, but PB was what I had on hand! IMG_5761 The amount of veggies in this was INSANE! I didn’t take a photo of the final product because I was that hangry – imagine a nice peanut sauce drizzled on top 😉

Also makes mean leftover salad for lunch in a mason jar.  Just put the dressing on the bottom, the veggies next, and then top with sesame seeds and hemp hearts… voila! So far, Angela can do no wrong 🙂 Here is the full detailed review: OSGChallenge 30 day review – Raw Pad Thai Lastly, the wonderful Eat Your Greens Detox Soup.  I was impressed by how many followers on Instagram have made this and loved it! I think the word detox stands out.  You can have bowl after bowl and not feel guilty, and get all the greens you need! One serving is only 152 kcal.  I have had it now three times, and each time, the flavours get stronger and more vibrant.  I have frozen the last portion for a rainy day.  I also added smoked salmon to mine so I could use it as a protein rich meal, without any added protein it is 7.7g of protein – not bad – but I prefer 20g of protein in a meal (I bike a lot!)
