Oh hi guys… do you like nut butter? I LOVE nut butter, in every shape and form. I probably go through a jar a week. Butmy obsession was hitting an all time high and so was my wallet. Plus, I got so discouraged by the many additives that go into normal nut butters. The healthy kinds were just out of my price range.
But then, I got a Vitamix…
And my life changed forever, in a good way! My dear friend Chef Cosmo from Cook Culture showed me how easy it was to stick some roasted nuts in the Vitamix and blend away! Yes, you don’t just have to makes soups or smoothies in the blender. It takes a bit of love (aka a tamper to get it going) but it is easy as 1 – 2 – 3. It is rich and flavorful, and drippy just like that good Kraft kind you used to eat as a kid.
But what if I don’t have a blender?
I also have made this recipe in my food processor and it works well, however you end up running the machine for twice as long. I would suggest the softer nuts or seeds, or a blend of many to get it going. The nut butter recipe that I will be sharing as you read on has a combo of peanuts, almonds and sunflower seeds. I also add a spoon or two of melted coconut oil to get it going even smoother.
Does the nut butter separate?
NO! Can you believe it? This really is the miracle nut butter. It can be left out in the cupboard or placed in the fridge and it stays one consistency. I don’t really know why other store bought varieties separate, I’m assuming it’s because they either add peanut or canola oil in. This is why I find coconut oil to be the best, as it takes on a more solid form in cooler conditions.
The best part?
You can mix up the flavours! I have shared three great flavour combos below. I have given batches to some friends and family and they can’t get enough of it. It makes the perfect gift for someone. I put it on my guest bed when people come to stay over. Have you ever felt a bit awkward sleeping at someones place and waking up wanting to grab a snack in their kitchen? This way, the guest can have a little snack if they are waiting on me (hehe! – weird but true, right?)
- 5 cups nuts or seeds (I use 3 cups peanuts, 1 cup almonds and 1 cup sunflower seeds)
- 2 tbsp coconut oil, melted
- pinch of sea salt
- 1/4 cup maple syrup (optional)
- Preheat oven to 350 degrees fahrenheit
- Mix seeds and nuts in bowl and add maple syrup (if wanting it sweetened)
- Place on baking dish and place in oven for 10 minutes, rotating pan after 5 mins, until lightly toasted
- Allow to cool, then place in high powered blender along with coconut oil and sea salt
- Blend on low until nuts and seeds are like sand
- Use the tamper (if you have one) and increase speed slowly to medium/high until the nuts are blended completely and drippy when lifted with a spoon
- Place in seal proof container and enjoy! (or custom flavour accordingly)

Oh So Cocoa
Add to two cups of original nuttin’ butter:
- 1 Tbsp cocoa nibs
- 1 Tbsp cocoa powder
- 1 tsp vanilla powder (and stir!)
Super Seedy
Add to two cups of original nuttin’ butter:
- 1 Tbsp hemp hearts
- 1 Tbsp sunflower seeds
- 1 Tbsp chia seeds (and stir!)
Feeling Chai
Add to two cups of original nuttin’ butter:
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cardamom and ginger, and
- 1/2 tsp vanilla extract (and stir!)
