Day 5: My New Roots Challenge – Review of Goat Milk Ricotta and Roasted Fruit

I have been just waiting patiently to show you this recipe, I had it right away and DEVOURED it.  I haven’t had all the My New Roots planned recipes yet, but I can safely say so far this is my favourite.

As you may have read earlier, I prepped the ricotta in advance, and it was a bit of a challenge (see here). However, it was well worth the wait.  Creamy and soft, with a hint of goat and some great tang, it mimicked some of the best cheese I’ve had here in Victoria, the Saltspring Island Goat Cheese – if you live in the area and haven’t tried it, it is a MUST!

IMG_6250I made some Life Changing Bread (see here), and got to roasting the fruit (see here for recipe).  I really love red grapes, but have never roasted them before.  Boy was I in for a treat.  One word however, I think I baked the fruit for double the time suggested (20 mins), as I really wanted a shrivelled looking fruit – didn’t really happen so I ended smashing them slightly and the juices just oozed out, it was fantastic.  Sprinkle them with black pepper and salt, sounds crazy but really is the perfect seasoning.

It’s really a great recipe to whip up in a moments notice, however all the steps for the ricotta and the bread take some time.  I loved it so much I doubled everything, so I could easily heat up the next day for breakfast.

IMG_6251My few constructive criticisms:  goat milk is pricey, so if money is tight, I think a regular milk would work just fine.  I also think the LC bread gets expensive with all the nuts and seeds, but really it’s so worth it.  I had to get graphic but the bread really does wonders for your colon (I’ve heard it’s the psyllium husk) so if you have trouble in that department, it’s the golden ticket 😉 My only other lower mark for this recipe is time, it all takes a bit of preparation and work.  Other than that, fantastic! All stores great as leftovers so make a bunch!

IMG_6255I rated this recipe a 34 out of 40, I need to start marking harder haha! These recipes are just way too good to be too critical.  You have outdone yourself Sarah, you really have.
