Day 4: My New Roots Challenge – Vanilla Rooibos Fig Newtons

Okay this is going to be a very short and sweet post, I am heading out to a food blogging event in a couple minutes! It’s day 4 of the My New Roots 21 Day Challenge – and I am tasked with my first dessert!

I have been dying to try these lovely Vanilla Rooibos Fig Newtons for a while now, it looked like a seemingly complicated recipe to be honest (sorry Sarah), as you have to make the dough in advance, and then use the food processor, and then roll the dough to bake… too many steps for a busy person! But I was determined.  I grew up on fig newtons as a child, my mom is a diehard fan, so I wanted to see what she thought of them as well!  The other thing that sold me on this recipe, the infusion of tea, who would have thought.  Genius.

IMG_6353_2So I decided to dust off my baking shoes (is that a thing?) and try these puppies out.  I was pleasantly surprised! Not too much work at all.  Again, Sarah saves the day with her careful steps, making sure they each work as you plan out the recipe.  Note: I would make the dough a day in advance.  I was too impatient with mine and it was really melty when it rolled, I don’t think the coconut oil had quite hardened.  I also recommend pre-buying the oat flour to save a step.  It really depends how ‘rough’ of a dough you want.  As you can tell from my photos, they look less like a fig newton, and more like granola (but still just as tasty!).

IMG_6352_2Other comments, well the nutritional content on this one was not too shabby!  160 calories, and 7.7g of fat (42.6%) with 53.6% Carbohydrates (21.7g) and 1.5g (3.8%) protein.  Not too bad for an after work snack or treat.  Figs are a great source of minerals and vitamins, and Sarah teaches us in her post that they are filled with calcium.  Bonus!

The taste was UNREAL.  Can I say that? It really was, wow I can’t get over how good they tasted, mom agreed.  So flavorful yet unique with the Rooibos tea (I used Jessie’s Tea from David’s Tea).  I had to give them all to my mom because I’m pretty sure I would eat them all in one sitting if no one was around.
