Day 2: My New Roots Challenge – Review of Socca with Asparagus, Dill and Feta

I am really enjoying this challenge so far, the food has been fantastic and so has the recipes, I’m learning how to make so many new things! I love it 🙂 I just discovered today what Socca is, which is made out of chickpea flour – very similar to the chickpea pancakes I made for the Oh She Glows Challenge!  This recipe is from the cookbook as well, page 61.

IMG_6260This meal was a bit of work to get together, you have to prep and let the socca batter sit, grill the asparagus, and caramelize the onions.   The instructions were well laid out and I appreciated how Sarah separated them into steps so the meal came together at the same time.  It still takes a lot of work though!  The nice thing about this meal is it makes a lot of cooked vegetables, and they keep for several days.  I was also shocked by how filling the socca was! I was going to put some feta on top but it didn’t need it, it was so flavourful with the the caramelized onions and tangy balsamic, and it was incredibly filling.

IMG_6262I did a nutritional analysis (See here for full nutritional content). In total, one portion is 326 calories, with 64% fat, 23.6% carbohydrates and 12.5% protein.  Some really clean ingredients in here, and swarming with veggies! The cost was pretty reasonable, and chickpea flour is very inexpensive (especially at ethnic grocery stores).

I think that is all to report with this one! Would I make any changes next time? Nope! I loved it, however be prepared for a bit more work to get together.   You can see my full review below, I gave it a solid 33.5/40.  Let me know what you think of this one lovelies?
