Day 19 – Review of the Black Bean Enchiladas, Quinoa Cakes and Tortilla Soup

Oh my, I am so behind on reviewing schedule! I am sorry!! I was away all week in Vancouver, and I just got back. Don’t you hate the unpacking part of travel? I just cleaned up my bomb of an apartment and did a big grocery shop for the week ahead.  Needless to say, not a ton of time for blogging…

I will keep this week quick and get straight to the goods 😉

IMG_5961These are the lovely Crispy Quinoa Cakes – I made these on my second night in Vancouver to take to my friends’ house.  We walked the seawall and baked these lovelies up afterwords.  We were quite hangry by the time we cooked them so unfortunately I only have the pre-baked pic 😉 I really liked these, however, I wish they were entirely gluten free.  I used all oat flour instead of the mix, so that my dear friend could eat them (she’s cutting out gluten completely).  I have made these before, but this time they didn’t seem to stick as nicely as the last time I made them.  So perhaps this was something that was tested extensively with different flours.

The tortilla soup (see oh She Glows Cookbook) was the meal I made on the first night with my brother and dad.  I saw that my dad had a jar of jalapeños left, so I kind of dumped that in… and well it was SPICY! I’m sure if I measured the jalapeños carefully it would have tasted just fine haha.  Anyways I loved it, but my poor brother was having a hard time finishing the bowl.  The crispy tortilla chips went over very well! I wish I had made some cashew sour cream for the top, that would be my only addition with this one.

And then, for my big dinner party, I made the Black Bean Enchiladas with Cilantro Avocado Cream Sauce (I followed the version in the cookbook).  It won the “Pick the Recipe” contest for taco Tuesday.  I celebrated the taco party on Thursday, but we had a blast! I cut the spices in half as my one bestie doesn’t like spice too much (she would have died with the tortilla soup!).  There was so much flavour with all the vegetables, that it was not bland without the spice.  I did find the tortillas impossible to serve (as you can see by my sad presentation below).  Otherwise, two thumbs way up!

Last but not least, those of you on Instagram saw I met one of my favourite food bloggers on my Vancouver trip, 
Sarah Britton! She is the author of the blog and now cookbook My New Roots.  Here book is absolutely beautiful.  She is doing a book tour across North America, so if she is coming to a city near you, you have to stop what you are doing to check it out! She is SUCH an inspiration, so kind and so full of knowledge.  I feel so blessed to have met her.  It has catalyzed my next whole foodie challenge, I am just trying to plan it out now so stay tuned!!
