Day 15: Review of the Flu-Fighter Smoothie, Classic Hummus and Thai Sweet Potato Burgers

I cannot believe I have made it part way through the challenge today!! I have been having the most amazing time on it.  I am up to my feet in cooking, blogging, ‘instagraming’ and sharing.  It doesn’t even feel like work because I have been having THAT much fun with it.

This week is extra busy as I am visiting home, and seeing many friends and family  I haven’t seen since christmas! I have incorporated cooking into the mix, in my dad’s lovely kitchen while he is at work.  I have a tiny little kitchen at home, with an extra tiny fridge… so this is pure luxury.  I went to the grocery store near by to stock up on supplies yesterday, and forgot what organic produce is like in Vancouver.  Although I only live a couple hours away, for some reason Victoria produce is ridiculously expensive.  I got a big bag of organic produce, legumes and nuts for 60$ yesterday, which I’m sure would be way more expensive back at home.  It’s these little things I appreciate while being in a big city.  I am sure by Saturday I will be so home sick and wanting to go back to the island life.  The grass is always greener…

I have some great things lined up this week, the one I’m most excited for is meeting Sarah Britton of My New Roots – and getting my brand new cookbook signed!  If you haven’t seen it yet, you must check the cookbook and blog out.  It is a bit different from Angela’s style of posts, more based on seasonal produce and some of her recipes require a bit more time commitment.  I have tried a bunch of her recipes already and I am so excited to start on the cookbook, she always has such a unique and creative approach to food.

Some of you are asking me what I plan to do when I’m done with the Oh She Glows Challenge… well don’t worry, I have many ideas.  I want to review/ challenge myself with other top name food bloggers, and some up and coming too! I also have challenge ideas based on other themes, which I will share with you when the time comes.  Do you have any ideas of challenges you want me to try? If so, please comment!

Okay, review time!

First up is the Flu Fighter Sunshine Smoothie (see cookbook page 65).  It seems very basic, but the flavours are so vibrant with the hint of cayenne, lemon juice and fresh ginger to compliment fresh organic navel oranges.  Blended with ice, it comes out smooth, frothy and wakes up any sleepy demon you have inside of you.

You can see my entire review on the Flu Fighter Sunshine Smoothie hereScreen Shot 2015-04-15 at 12.21.24 PMNext, I made a big batch of Classic hummus (see cookbook page 89) and added it to the recipe on the OSG blog titled Ode to Toast – vegan delight.  I was out of both sundried tomatoes and hemp hearts – but seriously hangry and had to make this… so my apologies as I made some substitutions with nutritional yeast, and store-bought vegan tapenade.  It was spread on some yummy spelt bread, and the result was INSANELY good.

You can see my full review on the Classic Hummus and Ode to Toast hereScreen Shot 2015-04-15 at 12.29.54 PMLast but not least, one of the Instagram favourites – the Thai Sweet Potato Burgers – with Spicy Peanut Sauce.  I must say, I know I went on and on about the caesar salad from the last post… but I think this trumps that recipe haha.  I decided to spiralize the sweet potato and pan fry with the burgers, and then I added spinach (and on the second day had a great realization to add avocado to the mix too).  No condiments are needed with the spicy peanut sauce, it is so decadent and creamy, you won’t even need a side or dessert after this meal.  Perfect for a summer dinner party or barbecue.
