Day 10 – Recipe Review of ‘No Nuts About it Granola’ and ‘Roasted Tomato Pizza’

Two new reviews for you lovely peeps today! I present to you first, the No Nuts About it Granola – from the Oh She Glows Recipe Bundle.  If you haven’t gotten the bundle yet, you really need to! I made the Winter Green Smoothie from it (see post here) and I am just ecstatic to try out more. It’s given me a sneak peak to my next challenge when the Oh She Glows Cookbook #2 comes out.

So the granola was super easy to make, and I love that it doesn’t have nuts in it.  Don’t get me wrong, I love me some nuts but sometimes too much is not a good thing, ya know? 😉

This is my sad attempt at food art, can anyone see the heart with blueberries?! Haha.  Anyways, it was really great with some kefir (vegan friends: I’d sub coconut yogurt or almond milk here) and fresh blueberries.  Yes…. spring is here!!

Next up, the oh so amazing Easy Roasted Tomato Pizza with Basil Cashew Cheeze.  For those of you who have tried her lasagna, this is a very similar sauce.  I love how it tells you to make way too much sauce, because this sauce is crack.  I kid you not you will end up licking half the bowl.  It is probably one of my favourite recipes ever.

I digress, the other wonderful thing about this recipe is that she asks you to make your own roasted tomatoes.  The verdict? Very easy and way more flavourful than buying store-bought.  I cheapened out and bought non organic tomatoes, and next time I will go for the real thing… because I can imagine them being that much better.

Once roasted, I combined with a bit of leftover garlic from last nights winter salad (see here) and spread it on the pizza along with the sauce.  The results were to die for.

I’d suggest drizzling some balsamic reduction if you have it on top.  I also wish I left some of my basil out of the sauce so I could have baked it on top… so I sprinkled some freeze dried basil I had.
