Good morning everyone! Today is day 5 of the Thug Kitchen 21 Day Challenge, and today I will be reviewing the Thug Kitchen Pina Colada Ice-cream. This was a recipe I wanted to review for a while. Who doesn’t love ice-cream? Who doesn’t love pina coladas? Who doesn’t love getting caught in the rain? Haha. I rest my case.
Review
This recipe has five ingredients and does not require an ice-cream maker. Bonus! Also, the ingredients are super easy to find and you can seem to get year round. I prefer fresh pineapple to frozen. However, I think it helps with the freezing of the ice-cream to blend it frozen. I do suggest using a good blender or food processor for this as well. I tried it with my immersion blender with no luck. I had to switch to my heavy duty food processor to get it blended really well.
The preparation is easy to do and the directions are easy to follow and to the point. I do however suggest that you mix the ice-cream mid freeze if possible. Mine hardened completely overnight and took a while to defrost and serve… hence the not so pretty consistency in the photos.
As for taste and texture: it tasted pretty good! I found it a bit on the ice like side, more similar to a gelato. My secondary taste tester loved it, however I wish it was a bit more ice-cream like. The appearance was adequate due to it freezing completely, I would have liked it to have a more smooth texture and appearance. It was great as an after dinner treat. I topped mine with coconut pieces and a bit more maple syrup.
Nutritionally, one serving is around 228 calories, which isn’t too bad. However it is quite high in sugar, even without the maple syrup. You can see a full nutritional breakdown in the Week 1 PDF.
The final verdict
I really liked this, and with 80% overall rating I was pleased. However, I do feel it could be improved in longevity… I was thinking it may be better as a popsicle than as ice-cream and will try that next!
