Thug Kitchen 21 Day Challenge – Prep for Week 1

Tomorrow, the Thug Kitchen 21 Day Challenge begins! And I am so so excited to get it started (if you haven’t heard my excitement already).  In preparation for the challenge, besides the thorough PDF I made with nutritional content, meal plan and grocery list, I thought I would give you some prep day tips to help you get the items ready for week 1.  I have instructed cooking six recipes, but with a couple hours of prep in the beginning, you will be shocked at how little time you spend cooking during the week.

So when you get home from the grocery store, the first thing I do is rinse all the produce and chop and bag what I can.  For this week I would chop the following things:

  1. Cabbage – shredded

  2. Carrot – grated or diced julienne

  3. Cauliflower – into small but bite-size florets

  4. Cilantro – diced fine

  5. Onion – diced fine

I would avoid dicing the eggplant until you are ready to make the meal as I find it goes soft really quickly.

Next, you can make the marinade for the eggplant soba noodle salad, it’s a quick thing to make but then the day you decide to make the dish, slice up the eggplant and let it sit in the juice for the day while you are at work.  Boom, you are that much faster at dinner to prepare the meal (I have it listed as a lunch – but really you can have it for lunch or for dinner, and then have leftovers the next day).

If you have the willpower, you can make the pina colada ice cream ahead of time – it needs to sit about 5 hours but doesn’t last longer than a few days.  So use your best judgement 😉

I would make the artichoke dip on the weekend as well, so you have time to snack on it during the week.  It doesn’t look like it takes long to make, so just bust some tunes and get after it.

Lastly, make the quick coleslaw for the cauliflower tacos, by letting the cabbage and carrots sit in the dressing in the fridge.  I would keep it in a mason jar or a tightly sealed container to keep it fresh for the next few days.
