It is the last day of the Thug Kitchen 21 Day Challenge!   Thank you to all of you for following along and seeing me test a bunch of different recipes.  It has been so fun.  I would really appreciate feedback on this challenge.  If you do have some, please comment below or send me a message to wholefoodiechallenge (at) gmail (dot) com.  I will be doing a final wrap up post in the coming days with my top recipes and will also post my BBQ contest results, and recipes.  Tune in as I will be also sharing with you a fun free download if you choose to host your own Thug Kitchen barbecue.

Today I am reviewing the Thug Kitchen Cobb Salad, found in the Party Grub cookbook p. 104.  I love a hearty salad, full of flavour and filling. I also really enjoy making salads for the week ahead.  They make a great lunch.  I have several friends that make the same salad for the entire week.  I think this recipe has a lot of potential in that it has many different ingredients, which can be paired together or enjoyed separately.  I was excited to test this recipe out.

At First Glance

Thug Kitchen Cobb Salad

This recipe has a lot of ingredients. I scored this category as low but you can choose to see it one of two ways.  Complicated, or lots of various parts.  You could opt one part out if you like or make it all on prep day and mix and match all week.  So not completely a bad thing.  The ingredients are fairly easy to find.  The only ingredient that is probably a bit obscure, and expensive is the liquid smoke.  However, I believe it’s crucial.  I also find miso a bit expensive, but a jar lasts a very long time. Overall, it didn’t take too long to make, but again various steps add to complication and time.

The Taste Test

Thug Kitchen Cobb SaladThere were some great overall flavours in this salad.  I really liked the onions, probably my favourite of the toppings.  The chickpeas were also great and could be a  great side on their own.  The dressing was fairly mild and neutral.  I think it was great with all the flavours going on in the salad.  It almost didn’t even need dressing.  I very much liked this.  I think the toppings, aside from the avocado kept very well throughout the week as well.  And the chickpeas and Avo made the salad very filling.

Final Verdict

Thug Kitchen Cobb SaladThis was a great different take on the Cobb salad, for a vegan of course. I would definitely make this again and play around with the flavour combinations.  I just would keep in mind that it takes a little longer and ingredients are heavy on this one.  I gave this recipe an overall rating of 81% – areas could be improved but overall a great B+ meal.

What do you think? Have you made this or want to make this?
