Review of the One Part Plant Tomato and White Bean Panzanella

It is Day 3 of the One Part Plant 21 Day Challenge and today I am reviewing the One Part Plant Tomato and White Bean Panzanella.  This recipe is found on page 108 of the One Part Plant Cookbook.  I laughed when I made this recipe, because I had no idea what panzanella was.  I thought for sure it was pasta, so I got water bowling all ready for it.  Hmm, I was totally off base!  I loved the intro to this recipe by Jessica, it was some good friends of hers who introduce her to it.  She now calls it the “Samzanella”.  So sweet!

At First Glance

Another recipe with very minimal ingredients, me likey!  The main ingredient One Part Plant Tomato and White Bean Panzanella is not noodles (ha, ha), it’s crusty bread!  I had a hard time finding a gluten-free bread I liked, so I went for the wheat variety.  All ingredients can be found in your typical grocery store which is awesome.  The other small feature of this recipe that I like is that she numbers the basil leaves.  I DESPISE when a recipe calls for 1/4 cup of basil or something like that.  It can be so hard to decipher at the store!

The Taste Test

The big crusty croutons were a big winner in the One Part Plant Tomato and White Bean Panzanella.  I overcooked my beans unfortunately so I didn’t care for the texture it gave (but that is my fault!).  My partner and I really liked the combination of flavours.  I most probably would half the amount of onion next time as I found I had indigestion afterwards.  But otherwise a great meal.  We were also able to have the panzanella the next day.

The Final Verdict

This was a nice little recipe, great for a potluck or summer gathering.  I found it a bit acidic but with a smaller onion, I think I would be thoroughly satisfied.  I rated this recipe 75% – which is a solid B!
