Review of the One Part Plant Creamy Grits with Avocado and Hot Sauce

It is day 2 of the One Part Plant 21 Day Challenge and today I will be reviewing the One Part Plant Creamy Grits with Avocado and Hot Sauce – found on page 62 of the One Part Plant Cookbook.  A few of the other gals who are helping me with this book launch have tried it.  I knew I had to try it when who lives in the south said this was better than the classics she has had!

At First Glance

The recipe seemed simple enough to make.  There wasn’t a lot of prep work other than soaking the cashews ahead of time (I hope you saw that in my prep guide!).  There were very few ingredients and all could easily be found in a typical grocery store.  I highly recommend buying corn grits at the beginning of the challenge, as there are a few recipes in the cookbook that use them.  The cost to purchase all ingredients was moderate – as depending on where you live avocado and cashews are costly.  However, these ingredients will get you through at least 4 servings.

The Taste Test

The time it took to make this meal was pretty great – cook and prepped and on the table in about half an hour!  The One Part Plant Creamy Grits were exactly that: creamy with just the touch of grit and texture.  I really enjoyed the taste and texture.  The hot sauce and avocado added a wonderful combination of flavours.  It was very satisfying and felt full for the rest of the day.  I also was happy to report that one serving was under 200 calories, so I did not feel guilty at all.  It is a great meal when trying to warm up, fill up and feel satisfied.

Final Verdict

Overall, I gave this recipe a solid 90% rating! It was hard to be critical of this one.  After eating it for the third day in a row I just cannot get enough!  It’s perfect for the colder days when you just want something warm and comforting, without the guilt.
