Review of Minimalist Baker’s Panko Avocado Tacos

Day 3 of the Minimalist Baker 21 Day Challenge, and I have another great review to share with you, today the Panko Baked Avocado Tacos.  I really should save this for when it’s ‘taco tuesday’ but I couldn’t wait any longer to share with you.  I hinted a few days ago that this recipe was on the horizon, and you guys were all ecstatic I knew it had to be one of the first ones I reviewed!

IMG_6984What was really exciting about these tacos, is that I bought avocados that did not seem to want to soften fast enough… I was super hesitant to use them but I did it anyways, and they turned out miraculously! You had no idea that the avocado was hard as rock, the baking caused them to soften over time.  So I would almost recommend using harder than normal avocados, just so that they don’t squish as much when baking or covering in lovely panko bread crumbs.

These bad boys are roughly 400 calories a serving (two tacos without any toppings), gluten free option with GF panko and corn tortillas, vegan, made with approximately 10 ingredients (depending on how many toppings you want on them), and takes 30 minutes to make.  I timed it.  It’s accurate!

IMG_7042Without giving too much more away, here is my thorough review:

  • Ingredients, Preparation & Cost – great easy list of ingredients.  I think Minimalist Baker is always going to score high on the ingredient category! The preparation was well laid out, I would make the radishes the day before in order for them to truly pickle, but otherwise very timed out.  Cost was medium, depending on where you are from avocados and panko are pricier.  But I think you could use any type of bread crumbs and they would work nicely.
  • Time – Like I said, very true to time as well!
  • Appearance – I mean, I think the pictures speak for themselves.  I really liked how the avocado stayed together, and there was a great balance of colour and simplicity to the meal.
  • Taste, Texture & Satiety Level – Great taste, the avocado was meaty and tender.  I wish I made some cashew cream or something though, as it was a bit dry.  It was missing more sauce of some sort.  Lime is super key for this one, it balances quite nicely with the pickled radishes and hot sauce.
  • Longevity – I left the avocados in the fridge overnight, and they were not brown the next day! They kept very nicely, I was very shocked.  I would store the toppings separately and then assemble the next day, to avoid sogginess
