Thug Kitchen 21 Day Challenge – Prep for week 2

Week two starts tomorrow… which means today is prep day for week 2  of the Thug Kitchen Challenge.  I am always shocked by how fast these challenges happen!  However quick it feels, I’m also so pumped with the amount of individuals who are following along for the ride.  So fun! Thank you to all of you who are interested in my challenge, it means so much.

If you did not see the post earlier this week, check it out now and that way you can get geared up for the recipes I will be reviewing for week two.  Please let me know what you think of these PDF’s.  I put a lot of work into them but know it’s not worth it if I’m not giving you the most relevant information.  I love a good constructive criticism!

Okay, now to help you get ready for the week ahead, I have posted a few prep day ideas so that you have minimal work to do during the week.  Hope you enjoy!

Step One: Wash and Pre-cut Vegetables

A word of caution about this: you do lose out on some important nutrients by cutting and prepping vegetables in advance.  If you have the time I suggest leaving this till the day of, but then you aren’t really prepping.  Weigh out your priorities!

  1. Strawberries (cut in half and freeze)
  2. Cauliflower – cut into bite size florets
  3. Cucumber – cut into strips
  4. Chives and Leeks – washed and chopped fine
  5. Onion – diced in bite size pieces (for kabobs)
  6. Pineapple – in bite size chunks

Step Two: Prep Ingredients/Sauces

  1. You can prepare the marinade for the kebabs, I find the flavour and shelf life last about 3 days
  2. Make the blended ice tea liquid, as it must sit a while to cool before you blend
  3. Freeze bananas – again for the blended tea
  4. Prep some brown rice – later to be used for the leek cakes, it is always best to make cakes or burgers when the rice is cold

Step Three: Make Cookie Dough

I almost missed this, but the recipe for the Almond Butter Chocolate Cookies states that you let the dough sit in the fridge or freezer for a while.  Well, that is a tease! So I suggest you make this when you have the willpower, and stick in the freezer for a later date.
