Guys, the day has arrived! The Pinch of Yum Challenge Week 1 has begun! It has been over a year since I did a challenge, can you believe it! (If you haven’t seen my challenges, I suggest you start with my last one: the One Part Plant Challenge).
I have been following Lindsay and Bjork over at Pinch of Yum for years. Although they aren’t completely plant-based, they have tons of vegetarian and vegan recipes. They also just make nice, simple, yummy food. If you are a food blogger yourself, you will also appreciate their resources, including a food blogger subscription site: Food Blogger Pro!
A quick recap on what my challenges look like
My challenges are simple: I try a recipe from a designated blog each day for 21 days! I will review breakfasts, lunches, dinners, snacks, drinks and simple prep day items. Think Julie & Julia meets modern day plant-based food blogs! Each day, you can follow me on Instagram to see what I’m making. I will review most of the recipes on my blog, and if you join my mailing list for the challenge you will get a special newsletter every friday with a review of the dessert and special contests. You will also receive a downloadable e-guide which includes the grocery list and prep day ideas for the week of recipes. It’s all free!
What am I making this week?
Okay, you probably want to know what I’m making, don’t you!? Now, Pinch of Yum has many recipes that are vegetarian, and a few that are also vegan. I have been trying to avoid dairy and gluten, so you will see that I make some substitutions in the recipes to make them completely plant-based and gluten-free. It is up to you whether you want to follow the recipes completely or not!
