With only one day left before the challenge begins, I thought I would do another One Part Plant Shoutout.  Today, I would like to introduce you to Jessica Grosman.  She has a wealth of knowledge and an interest in healthy foods – she is a registered dietitian after all!  Read further to hear her take on the plant-based lifestyle.

Tell me a bit about yourself?

I’m a Registered Dietitian, recipe developer and culinary nutrition educator. I’m also a mom and a wife…I love having constant taste-testers for my recipes, my husband and 11 year old daughter are my biggest critics when it comes to recipes! I promote a plant-based diet, but what I really want my clients to do is eat more plants and be consciously aware of what they’re eating and how it affects their health & wellness everyday.

The OPP movement is all about trying to eat one plant based meal a day. What do you do to try to achieve this? Are there areas that you struggle in?

Since I eat a completely plant-based and gluten-free diet, the OPP movement isn’t problematic for me! However, I know that it’s a struggle for omnivores, at times, and I like to share recipes that are delicious and nourishing – and full of plants! I’m a very positive person – the glass is half- full (not half-empty), right? I like to show that eating OPP is a choice to add to one’s food intake, it’s not about deprivation at all.

What recipes have you tried from the OPP cookbook so far? Any you would highly recommend?

When I was a recipe tester for the OPP cookbook, I made a Thai coconut soup, which was delicious. I actually made it on Father’s Day for my husband, he gave it 2-thumbs up! I love the chocolate chunk cookies and the Creamy Mushroom Lasagna. I think every recipe looks fabulous, I love that they’re mostly very easy and comfort-food, at least for me!

What are some ways that you promote eating plant-based (even little bits) to your family, coworkers and friends?

I like to make recipes to share with others which are typically not plant-based (such as nachos, for example) and prove that plant-based cuisine does not lead to deprivation.  As I said, I’m a positive person, so I like to add nourishing foods to the menu, familiar flavors with alternative ingredients.

Anything else you would like to share?

Living a plant-based life is the best way that I’ve found to care for my body, to support its healing and growth, to eat mindfully and with intention. I never feel deprived or restricted. Eating and living plant-based and gluten-free is my choice and my preference.
