Review of the One Part Plant Daniel Holzman’s Chopped Vegetable Salad

We are on Day 9 of the One Part Plant 21 Day Challenge and today I am reviewing the One Part Plant Daniel’s Chopped Salad 115 of the One Part Plant Cookbook.  Daniel is the owner of a meatball shop in NYC.  Jessica asked him to try out OPP and contribute a recipe to her cookbook.  Well he picked probably the healthiest salad I’ve ever seen!  I was amped to try this recipe as it looked like it had every vegetable but the kitchen sink in it.

As mentioned above, the One Part Plant Daniel’s Chopped Salad has a lot of ingredients.  Most can be found at the typical grocery store, however there are a few more obscure veggies, like endives and radicchio.  I found buying all these bits and pieces added up, especially if you can’t just buy a bit of each.  The directions for preparing the salad were easy to follow.  One little comment – I do find the layout of this recipe to be deceiving as the ingredients list continues onto the next column.  Very minor, however I almost missed a few ingredients when shopping.

The Taste Test

The One Part Plant Daniel’s Chopped Salad was super fresh.  It had a lot of great textures and flavours.  I really liked the dressing and found the nuttiness and bitterness of the tahini to balance the salad quite well.  It made quite a few portions.  I assembled the remaining ingredients in mason jars as a layered salad.  On the bottom, I put the dressing, followed by the denser ingredients such as carrots and topped with the delicate greens such as parsley.  It kept well for lunch for several days.

Final Verdict

I rated the One Part Plant Daniel’s Chopped Salad as 76%.  I would make again, however I probably would have omitted a few ingredients to lessen the cost and preparation.  It would be great in summer when I’m more used to digesting raw ingredients.
