Review of the One Part Plant Creamy Lasagna and OPP Shoutout!

Today is day 10 of the One Part Plant 21 Day Challenge and I will be reviewing the One Part Plant Creamy Mushroom Lasagna! I will also be doing another shoutout below.  The One Part Plant Creamy Mushroom Lasagna is found on page 155 of the One Part Plant Cookbook.  I always love to try a plant-based lasagna.  Addicted to cheese, I love to see what people do to replace the taste and texture.  The creamy sauce of mushrooms and cashews definitely caught my eye!

This recipe was fairly straight forward and didn’t take too much time to prepare.  I have a nifty scale which I found handy in weighing the chopped mushrooms so that I had just the right amount.  The cashews have to be soaked previously so it does add a bit to the preparation tasks.

The recipe was fairly inexpensive, with a few of the ingredients being more expensive (mushrooms, cashews, gluten free noodles).  However, it makes a massive lasagna which is easy to freeze so overall it’s pretty low budget.

I liked the layers of sauce, noodles and cream in between.  I found that there was enough filling to soak the noodles – which is always important!

The Taste Test

The taste of the One Part Plant Creamy Mushroom Lasagna was great.  I loved the creaminess of the sauce and the layers between marinara that I made last week.  I felt it could have used a bit more zest to make it cheezy, however I guess that’s not the point of a plant-based lasagna! The nutritional yeast topping was a great idea.  I probably would have added just a touch more to the sauce and to the topping.  The One Part Plant Creamy Mushroom Lasagna kept very well in the fridge or freezer and was super filling.

Final Verdict

Overall, I rate this recipe 86% which is a solid A-! Very tasty and great to have in your back pocket for a gathering or when you need to stock up the freezer.  Highly recommend it!

Tell me a bit about yourself?

I am a writer and artist, currently focusing on online journalism where I contribute my writing, design work and creativity. I’ve always had a passion for food, fashion and art. I live a balanced life, aka I have a great love for chocolate desserts and giant plant-based meals. I run hundreds of miles each year and have a wealth of trivial knowledge.

The OPP movement is all about trying to eat one plant based meal a day.  What do you do to try to achieve this?  Are there areas that you struggle in?

I love finding inspiration for eating more plant-based meals by looking through websites and cookbooks. Seeing new and exciting ways to prepare cauliflower or beets or lentils really makes me crave more plants. When you realize that plant-based meals are more than just salad, the opportunities are endless (and delicious)! When I discovered something like the One Part Plant cookbook, it really invigorates me and gets me back in the kitchen with enthusiasm.

Sometimes it can be hard to have a nice, plant-based meal when traveling or visiting with extended family. My partner’s parents use a lot of butter, cheese and meat in their cooking, but I don’t want to be rude when I am offered a home cooked meal. Sometimes you pick your battles and sometimes you just eat the garnish. Also, if possible, I try to take matters in my own hands by offering to cook myself or inviting people to veggie-friendly restaurants.

What are some ways that you promote eating plant-based (even little bits) to your family, coworkers and friends?

I always like to invite my friends and family to dine with me at places that serve a lot of items or an entirely plant-based menu. When I make a big batch of plant-based muffins or cookies or a hearty entree, I like to share that with my coworkers and friends, too. It gives me great joy when someone tries a plant-based meal for the first time and they are blown away by the flavors–it helps prove just how easy it can be to eat toward a better plant-filled life.

Anything else you would like to share?

What I love about the OPP movement is that it is easily attainable. You’re probably already eating these things, you might just need to make them the main attraction on your plate. The movement works with you: you can get involved in the kitchen or find meals that take 5 minutes. Plus, the results are instant: plants really make your body feel best!
