Hi Y’all! We are already heading into the weekend and Day 4 of the One Part Plant Challenge, so I thought I would kick it off with some One Part Plant Chocolate Chunk Cookies.  They are found on page 190 of the One Part Plant Cookbook.  These cookies seemed too good to be true.  The recipe directions were so easy and simple.   Also, it was pretty low in sugar, gluten free and only 174 calories per cookie.  Say Whaaaaat?!

At First Glance

I must admit, there is one little thing I’m not the biggest fan of with this cookbook.  That is, that it doesn’t specify how long it takes to make.  But by judging the recipe before I got started, I felt like I could have the cookies done in less than half an hour, without too much cleanup.  I was right.  The ingredients were fairly easy to find.  You may need to go to a specialty store for the brown rice flour but I find it is relatively easy to find these days.  Costs was a little pricier, but still cheaper than buying pre-made gluten free cookies in a bakery!

The Taste Test

The instructions call for 10 minutes to start in the oven.  I had two racks going, and the bottom level was ready right in 10 minutes.  The top level took about 15 minutes in total. I noticed right away that the more cooked cookies kept together better and lasted longer.  I really liked the taste of these.  I found the texture a little bit different than a typical chocolate chip cookie.  It just had more of a peanut butter cookie consistency.  Overall, the One Part Plant Chocolate Chunk Cookies were a hit with my friends and didn’t last long.

Final Verdict

Like I said, just a few minor adjustments and this recipe would be an A+.  I rated this recipe an overall score of 83%.  Not bad at all.  I would definitely make it again.  The cookbook has a ‘kitchen note’ to make smaller and use for ice-cream cookies.  C’mon summer, that idea sounds amazing!
