I am so excited to announce that we have started Day 1 of the One Part Plant 21 Day Challenge! Today I am reviewing the One Part Plant Chia Fruit Toast – found on page 44 of the One Part Plant Cookbook.  If you haven’t picked up the One Part Plant Cookbook yet – it is in stores now and also online.

Review of the One Part Plant Chia Fruit Toast

On first glance, the chia fruit toast seems nothing out of the ordinary – toast with nut butter I make almost every day.  But instead of topping nut butter with jam, Jessica suggests berries and chia seeds.  I never thought to have chia as a topping for something but it seemed simple enough.

I live in Victoria, Canada where currently berries aren’t in season.  You can pay about $7 for a small pint of blueberries, or buy the frozen variety.  So I decided to try to stay local and I made the chia fruit toast with apples.  I pan fried them in a bit of cinnamon and coconut sugar.

The flavor profile was amazing.  The toast tasted almost like an apple pie.  The chia seed was that added crunch I didn’t even think I needed.  I like how this meal took very little preparation, had less than 5 ingredients and was customizable to the fruit you had on hand.

If you want to make the apples, I heated the pan with a bit of coconut oil under medium heat.  Slice the apples very thin, and push them out to make an accordion shape.  Place on pan and sprinkle sugar and cinnamon on top.  Cook for 3-5 minutes.  You can either flip and re-season, or if you feel like you are going to mess up the apple, stick it under the broiler for a couple more minutes.

Overall Rating

I rated the chia fruit toast a 88%.  Overall it is a simple, elegant meal and great to start off your day with a meal that is completely plant based!!
