Guys, it’s day 21! The final day of the One Part Plant 21 Day Challenge and today I am reviewing the One Part Plant Almond Cherry Muffins. They are found on page 46 of the One Part Plant Cookbook.
I cannot believe today is the last day. It has been an absolute pleasure to review all the book content. I will be posting an overall blog review and my thoughts tomorrow. One Part Plant Almond Cherry Muffins At First Glance
Out of all the recipes in the OPP Book, I think this one has the most ingredients (well besides the salad). However, it still wasn’t that many ingredients! Some of the more obscure ingredients were almond extract and cherries. I bought frozen cherries as fresh weren’t in season. That drove off the cost
The recipe was easy to follow. I found that the batter was super thick and that threw me off a bit, but the baked well.
The Taste Test
I have to admit, I wasn’t the biggest fan of the taste of the One Part Plant Almond Cherry Muffins. I could really taste the chickpea flour and the almond taste was hiding. Once the muffins cooled down, they got quite dense and hard. You can tell that they didn’t make as uniform a shape. I believe this is from the batter being too thick. Chickpea flour tends to be a thickening flour, so I wonder if this would change with a different flour.
The One Part Plant Almond Cherry Muffins were rated at 63%. I would like to make them again, but perhaps with a different flour than chickpea. Perhaps more of a blend of GF flours would be nice. I love the combination of almond and oat flour, so I may try that next!
