Oh She Glows 30 Day Challenge – Week 1 Guide

Okay folks – the countdown officially begins, I have less than a week left until my Oh She Glows 30 day challenge begins.  I will be eating exclusively from her blog (unless for some reason I need to eat out for a birthday party or something like that).  This means a breakfast, lunch, dinner, snack and dessert every day from the blog! I prepped this weekend by watching Julie and Julia – and I feel exactly like Julie, nervous but excited to see if I can do it.  Luckily I don’t have to do anything insane like cook live lobster, and luckily Angela creates really easy to follow and non-time consuming recipes.  So I think I can do it!

Oh She Glows 30 Day Challenge

One of my favourite oh she glows recipe – Glowing “Green” Pasta Primavera (I put in some pasta too ;))

I don’t expect any of you to commit to this challenge as well, but I thought I would publish all the prepping I’m doing in case you may want to participate, at least partially.

How this will work:

Each week, I will be posting my menu (probably a couple days before) along with thOh She Glows 30 Day Challengee shopping list and nutritional content.  That way, whoever wants to participate can do the shopping and be prepped and ready to go!  Please note that I am planning to do this challenge on my own, although from time to time I will cook for two

I will be using the day before the week begins (in this case tuesday) to prep some of the recipes – usually I make any snacks in advance (muffins, bars, hummus), and at least one or two meals.  I like to make my beans from dry – so I’ll often soak everything I need for the week as well.

Our tiny apartment usually looks like a bomb hits it when I have my prep day.  My poor boyfriend, bless his soul, hightails it out of the suite when I’m a prepping 😉

So here it is, in all it’s glory – week 1 recipes, suggested meal plan, shopping list, and nutritional content! I hope this list of grocery items doesn’t scare you… it kind of scared me to be honest but if you look closely, there are small amounts of each ingredient – and if you do a big pantry shop (see post here) – you will be prepped for this month and beyond with Oh She Glows!
