The Minimalist Baker 21 Day Challenge is here! 21 days of eating exclusively from the blog, with a meal plan, grocery list and estimated time and ingredient list to follow along!
For those of you new to Minimalist Baker‘s recipes, do not fret, these are just as delicious as some of my previous blogs I’ve reviewed. What is unique about Dana & John’s blog, is that they try to use less than 10 ingredients, and less that 30 minutes in most of their recipes. They do not have a book out yet, however they do have a 42 page detox e-book if you sign up for their email list (see home page here), as well as a 31 day planned e-book (found here). This cookbook is super cool, in that it has all your next dinners mapped out for you, along with grocery lists and nutritional content. They’ve really done all the work for you. I hosted a contest where I gave away one copy of this e-book, but stay tuned as I plan to do at least one more!
So here are the recipes I have prepared to make this week!

Something different I’ve done to this challenge compared to my other previous challenges: I have created four options for a daily meal including 4 of the 10 recipes. That way you can try out parts of the meal plan, or try all of them if you like! I have separated them based on calories too, depending on how filling of a meal you want that day.
So without further ado, here are the meals!
