Deliciously Ella Challenge – Week 2 Guide

I cannot believe I am into week 2 already of the Deliciously Ella 14 Day Challenge.  It has gone by very quick.  I have decided to do two weeks instead of three as I wanted to diversify my blog into other challenges in the spring and summer months.  I am glad I did as these challenges do take a lot of work to execute! But it is really a great way to understand if a blog is worth following or not.

Initial thoughts so far with this blog, Deliciously Ella, is that the recipes use little ingredients and overall do well on the preparation front.  On the flip side, she tends to be heavy on nut content (as all recipes are gluten free and vegan).  This can be problematic for dietary restrictions, calorie content (nuts are quite high in fat – even though it’s a better fat) and the wallet.  I am not sure how nuts are elsewhere around the world, but they are quite expensive here!  It will be interesting to see how expensive this week gets.
